Four Sigma Foods 101 – Maitake

Maitake is a Japanese word, meaning “dancing mushroom.” The name is said to be derived from a tale of the Samurai: they would search deep in mountain forests for these precious mushrooms, and dance for joy when they finally found them. English names for maitake include hen-of-the-woods, ram’s head and sheep’s head; the common German name is Klapperschwamm. The mushroom is native to regions in northeastern Japan and North America.

One especially important attribute of maitake is its anti-diabetic effect, unrivaled by nearly any other variety of plant.

Why to Use Maitake

Like so many other medicinal mushrooms, numerous medicinal effects are attributed to maitake. These include immune system enhancement, as well as anti-tumor, antioxidant and hypocholesterolemic properties. It is low in calories, but rich in minerals, various vitamins and amino acids, and fiber. Many Asians, especially Japanese, consider maitake a particularly tasty food, and find its texture very appealing.

How to Use Maitake

Fresh or dried maitake mushrooms can be used as a meat substitute. In Western countries, the most common and simplest way to enjoy maitake’s health benefits is by taking capsules of maitake extract powder. Since it is non-toxic, one can use it in large amounts without worrying about side effects or overdosing.
