3. Coconut butter mushroom coffee cups

These coconut butter cups are so simple yet delicious, full of nutrients and are definitely the perfect treat on summer <3

  • - 1/2 cup coconut butter (melted)
  • - 1 tsp coconut nectar

Mushroom coffee:

  • - 1/2 cup coconut butter (melted)
  • - 1 tsp coconut nectar
  • - 1 sachet Four Sigma Foods Mushroom coffee with chaga and cordyceps mushroom

  • - Trail mix

For the plain layer:
1. Melt the coconut butter using the double boiler method
2. Stir in 1 tsp of coconut nectar
3. Set aside for later use

For the Mushroom Coffee layer:
1. Do the same as the plain layer, except adding 1 sachet to the coconut butter.
2. Stir well until the mixture turns brown and smells good. At this point, you can have a try if the sweetness is alright. But please resist to have it all up, otherwise you may not have enough coconut butter for the mushroom coffee layer :P
3. Place 1 tsp of the above mixture to the bottom of some tiny silicon tart moulds.
4. Smooth out the surface and place it into the freezer for around 10-15 minutes until they harden
5. Remove from the freezer and add 1 tsp of the plain layer on top of the coffee layer.
6. Smooth out the surface and top them with your choice of toppings. Here I used my own trail mix with goji berries, sunflower seeds and raw cacao nibs.
7. Return them to the freezer for another 20 minutes.
8. Remove the cups from the mould and enjoy! :)
